Happy Friday!

So yesterday was super hard for me. I was just really hungry all day. I wanted to quit. But i haven't. And first thing this morning i juiced. I did the Sunset Blend Juice found here. It was so delicious and energizing! I am hoping today i can get my new juicer! Sadly, next weekend i will have to stop for a few days, we are going to California for a funeral. But i plan to eat 100% Veggies.

Another random note. I took the end of the lettuce i had used previously and put it in water, and it's starting to grow! I'm thinking about having several going and having a living salad bar. We shall see how far i get on that.

Avocado Pumpkin Pie Smoothie

This smoothie is rich and creamy. And great for you too!

1 Avocado
1/2 Can of Organic Pumpkin ( or you can use fresh!)
1 Tbs Organic Pumpkin Pie Spice
1 Cup Almond Milk (or milk of choice)
1 Banana
Handful of dates

Blend together, and enjoy the sweet creaminess of this smoothie!

Lemon Poppy Seed Truffles

Yesterday was the hardest day yet, and it was only day 3. We had friends over for dinner and they made venison, pasta, and salad. I had my kale, cucumber, orange, lemon juice with a salad . Talk about good smells. The smell of the meat cooking, mmm, and then watching everyone eat it. But i didn't eat any, even though i wanted to SO badly. I made lemon poppy seed truffles though.They were so good, and they are RAW!! Here is the recipe.

Lemon Poppy Seed Truffles

3/4 Cup Almonds
1/2 Cup Cashews
1 1/2 tsp lemon juice
Lemon Zest
1/8 Cup Poppy Seed
1 Cup plus 4 Dates
2 TBS water


Mix Nuts in food processor until ground like a flour. Add lemon, dates and poppy seeds. Blend well. Add water (or you can omit this if it is moist enough). Roll into bite size pieces and refrigerate. Enjoy!

Day 2

   So today is day 2 of only fruits and veggies. I'm super hungry, but not the normal hungry. I need to make sure i drink LOTS of water. Tomorrow we are having friends over and i'm trying to decide what i should make that i can eat and they can. I'm going with a "dessert" , and i think i may make raw vegan lemon poppy truffles. Basically it has nuts, seeds, dates, and lemon. I guess that will be ok? Wednesday is day 1 of ALL JUICE for me. Also we are supposed to get around 12 inches of snow. (HOLY SMOKES!) If i make the lemon poppy truffles i'll post a recipe later, with a review and possible pictures if i remember. Tomorrow i'm going to fill an empty 1 gallon jug and use that for my drinking water to make sure i drink lots. It's really important for me to drink plenty of water to flush out toxins. New Facebook Page!

I now have a new facebook page for this blog! Go like it at facebook.com/Goingback2thebasics . I will post a little bit more stuff on there, but i will also keep up with the blog. 

Well today is Day 1! 30 days to go! In five days i will be juicing 100% . Right now though I am sick. So i am going to juice some grapefruit for breakfast, maybe have it with a little kale. I'm looking forward to feeling good again, i know one reason i'm sick is from my poor diet. This is the first time i've been sick in a year. Crazy! Happy first day of March!

It has been awhile since i've written anything on here. But i will make sure to post more frequently, especially with my 31 day journey coming March 1. Starting March 1st i will be doing a "Reboot your health" plan. I will not eat any eggs, dairy, meat, gluten, highly processed foods. For 15-20 days i'll be on a juice fast (Just fruit and veggie juices!) and before and after eating as clean as i can. I will also be exercising (not as much as my P-90X routine though) and trying to get in shape (maybe run a 5k in the future?). I will be blogging about this 31 day adventure and will be posting recipes for food, snacks, desserts, and juices that i have tried. This experiment on here will be a journal in a way, i will be telling you all of my struggles throughout the fast, my goals, how i feel and so on. I look forward to feeling better. A few things i have been struggling health wise are : Sleep (chronic fatigue), Energy, headaches, eczema (rash type thing that is annoying), stomach problems, weight gain, extreme mood swings, oh and did i mention i'm tired ALL the time?
    What made me want to start this? Well first off, i'm tired of being tired. Second, i watched a movie called "Fat, Sick, and Nearly Dead" that inspired me to change some things in my life. A lot of you know me as a "health nut" but recently (since Christmas) i've become addicted to processed foods. I need to do something now to change my health, and feel like a 23 year old instead of a 43 year old. The website i'm following and getting most of my ideas from is http://www.rebootwithjoe.com/ . Raw Vegan Carrot Cake Cupcakes W/Frosting

It's that time of year! Yummy foods all around, lots of sweets, and of course carrot cake! Just made some of these cupcakes for Thanksgiving. The original recipe is here Cupcake Recipe.


Ingredients:
For the cupcakes:
  • 1 cup walnuts (not soaked)
  • 1 cup dates
  • 2 cups grated raw carrots, squeezed well through cheesecloth or with paper towel to remove as much excess moisture as possible (this is important!)
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • Dash nutmeg
  • 1/8 tsp sea salt
  • 3/4 cup raisins
For the frosting: makes about 1 cup
  • 1 cup cashews, soaked 1+ hours
  • 1/3 cup agave syrup
  • Dash sea salt
  • 1 tsp lemon juice (I subsituted .5 teaspoon of apple cider vinegar for this because there is someone in my family who is allergic to lemons) 
  • Water

Blend Walnuts and dates with food processor
Add Carrots and Spices until a "dough" forms
Add raisins by "pulsing" to blend evenly.
Place the "dough" in cupcake liners or molds and place in fridge. (makes about 6) 

Frosting:
Blend Cashews and Agave in food processor
add salt and lemon
Add small amounts of water until you get the texture you want .

Add Frosting to cupcakes.
Enjoy!!
